The Shun Kanso 8" Chef's Knife brings a newer, simpler design to an essential kitchen tool. The most versatile knife in any block, the 8-inch Chef's is an all-purpose blade that's the perfect length for slicing, dicing, chopping and mincing small and medium-sized foods - from strawberries to onions and eggplants. The rounded belly of this knife can be gently rocked through garlic and fresh herbs to produce a very fine mince. The wide blade keeps knuckles off the cutting board, and makes it easy to transfer ingredients from the board to the cooking pan.
The Kanso line of Shun knives was designed based on Zen philosophy, and its name means "simplicity." Shun took only the most essential elements of a knife - high-performance steel, razor-sharp edge, perfect balance and precision cutting control - and created a simple line of knives that provides simply perfect performance. The Tagayasan hard wood handle is contoured for the chef's grip and precision cutting. Tagayasan, known as "iron sword wood," was traditionally used in crafting Samurai sword handles. This wood is naturally dense, durable and beautiful.
