While there are some all-purpose Cheese Knives, there are also many designed to best cut specific styles of cheese. Soft cheeses are best sliced with knives with thin blades that won't get stuck. Cheddars and other similar cheeses benefit from knives with holes in the blade that prevent the cheese from sticking to the knife blade as it cuts through. Parmesan and other hard cheeses are best cut with wedge-shaped blades that can pry off wedges. Many all-purpose cheese knives have a forked tip that's perfect for spearing and serving cut slices.
