The Wusthof Gourmet 5" Boning Knife has a tapered, pointed blade ideal for working closely around joints and bones. The unique shape of the blade is designed for de-boning chicken or ham, and trimming fat and sinews.
Each knife in the Gourmet series by Wusthof-Trident is precisely cut from a single piece of high-quality, high-carbon steel with the latest state of the art laser technology. The steel used in this line is the same as that in the renowned Wusthof Classic and Classic Ikon forged series. The Gourmet line also features a new handle design made of a highly durable synthetic material • Polyoxymethylene (POM) • which has a tighter molecular structure to resist fading and discoloration.

PEtec • The Best Is Now Better
Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
