The Classic Ikon 5" Boning Knife by Wusthof has a tapered, pointed blade ideal for working closely around joints and bones. The Boning Knife is designed for de-boning chicken or ham, and trimming fat and sinews.

Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots.
