The Shun Shiranami 7-inch Santoku Knife is a beautiful kitchen multi-tasker. The Shiranami Santoku has a razor-sharp 71-layer Dual Core Damascus steel blade with a beautiful wave pattern that inspired the name Shiranami, which refers to a white-capped wave.
The contoured handle of the Shiranami is resin-stabilized Prussian Blue Jute Micarta, which, besides being beautiful, offers a secure grip, water resistance, and comfort that lasts even during all-day cooking marathons.
In the tradition of Japan's ancient sword smiths, each elegant damascus-clad Shun Shiranami knife is handcrafted in Seki City, Japan with a 100-step process. The blade is made with 71 micro-layers of Dual Core Damascus Steel forged into a wave-inspired pattern that isn't just beautiful, but also reduces drag and allows even sticky foods to slide off the blade. The blade is then sharpened to a 16-degree angle.
The blade's forward-tilting bolster is designed for a pinch grip for added precision and control with every cut.
Each Shiranami's balance and strength are enhanced with a hidden composite tang. The embossed stainless steel end cap also adds both elegance and balance.
The Santoku is an all-purpose kitchen knife with a name meaning "three virtues." The "three virtues" of the Santoku Japanese blade shape are twofold: referring to the three types of food the Santoku is designed to prepare - vegetables, poultry and fish - and the three types of cuts at which it excels - slicing, dicing and chopping.
