The safe and easy to use Universal 4-Stage Knife Sharpener (2 stages for standard blades, 2 stages for Asian blades) by Wusthof requires nothing but a few easy strokes to keep all your knives sharp. Stage one, the V-shaped cutting head with crossed carbide blades (coarse) quickly sharpens dull knives. Stage two, the ceramic side (fine), provides a polished, razor sharp finish to the blade.
The Universal Knife Sharpener has been designed with two pairs of carbide and ceramic notches - one angled for standard knife blades, and the second specifically designed for the unique angle of Asian blades.
To use the Universal Knife Sharpener, first select Asian or Standard by sliding the cover to the appropriate side, and then place the sharpener on a flat work surface, holding the sharpener with one hand and the knife handle with the other. Insert the knife blade fully into the notch (carbide for dull blades, ceramic for reasonably sharp blades) at a 90-degree angle to the sharpener (straight up and down). Apply moderate downward pressure on the blade while pulling the knife toward you. Repeat this action as necessary, always pulling the blade from heel to tip (never back and forth) through the notch.
After use, always clean your sharpener with a damp cloth or mild brush, then wipe dry. Do not rinse with water.
While the Universal Sharpener is suited to serrated and scalloped edges, use only the ceramic (fine) stage for these blades. The carbide stage will damage serrated blades.
