The Grand Maitre 7-inch Granton-edge Santoku Knife is a multi-purpose knife that combines the functionality of a cleaver and a chef's knife. It is great for chopping and slicing, and its unique blade doubles as a spatula for scooping up food after it is cut. The granton, or hollow edge creates air pockets between the blade and the food, allowing food to slide off easily and preventing sticking of even the starchiest foods such as potatoes.
This knife has a beautifully balanced, perfectly weighted full tang construction, an intuitively engineered comfortable handle, and a no-stain high polished forged steel blade with an edge that will retain its razor sharpness. The handle of this elegant knife is made of Poly Oxy Methylene (POM), which holds its shape and will not crack or separate from the blade. It is triple-riveted and ergonomically rounded to provide optimum weight, balance and comfort.
The blade is crafted of high carbon no stain steel, and the bolsterless edge allows for use of the entire blade and ease of sharpening.
This fine cutlery is hot-drop hand forged and ice tempered by master forgers in Solingen, Germany exclusively for Victorinox. It is then shipped to Victorinox in Ibach, Switzerland for application of their famous proprietary sharp edge and rigid quality control finishing.
Engraving: Up to 12 characters can be custom laser engraved on the blade of the Grand Maitre Santoku Knife.
A granton edge, or "kullenschiff" edge, has hollowed out grooves on the sides of the blade. These grooves fill with the fat and juices of the product being sliced, which allows for thin, even cuts without tearing or shredding the meat.
