    HIGH PERFORMANCE CARBON STEEL BLADES
    The heirloom-quality Bob Kramer Carbon Collection by Zwilling is a return to high-performance straight carbon steel kitchen cutlery. Featuring hand-honed 61 Rockwell hardness carbon steel blades, the knives in this Kramer collection perform to the high standards of any professional chef. The amalgamation of iron and carbon in these blades creates a superfine grain structure, resulting in an astoundingly sharp and tough edge. This straight carbon steel 52100 is the same steel used by Master Bladesmith Bob Kramer in his legendary Washington workshop.

    While discerning chefs wait years for an original Kramer, the Kramer by Zwilling collection of cutlery designed by Bob Kramer brings the same quality steel and unparalleled design to home chefs for the first time.

    Made in Japan using the traditional Japanese 3-step method of blade finishing, the angle of each blade is honed by an artisan to 15 degrees per side. This angle, the finishing method, and the high carbon steel all blend to yield scalpel-like sharpness that lasts, and ease of sharpening.

    While maintaining a carbon steel blade requires some diligence, professional chefs argue that the quality can't be beat. Simply taking care to wash and dry your knife after each use will lead to years of exceptional performance. Over time, carbon steel blades develop a blue-gray patina indicative of a chef's favorite knife.

    HAND FINISHED HANDLES
    The handle of each Kramer Carbon Collection knife is hand-finished, lustrous Micarta, and features brass rivets and a mosaic pin crafted by Bob Kramer in his Washington state workshop. These beautiful handles are crafted to mirror the shape of your palm for comfort and ease of use, and highlight the beautiful, fully rounded and mirror polished spine and choil (where the blade meets the handle) of the knives.

    THE KRAMER 9-INCH CARBON STEEL SLICING KNIFE BY ZWILLING
    The long, thin blade of the 9 inch slicer (or carving knife ) is designed to slice cleanly through meat with one long stroke. Slicing refers to cutting a roast or other meat in the kitchen, while carving refers to the same thing done table-side.

    In 1992, Bob Kramer moved from working as door-to-door kitchen knife sharpener to opening his own knife-forging shop in Seattle. As a former chef, Kramer knew what made an exceptional knife, and with training from knife forging artisans, he learned what it took to create this essential tool. Bob Kramer is one of only about 100 Master Bladesmiths in the United States, and is the only one with this honor who creates only kitchen knives. The Kramer Carbon Collection is a line of knives by Kramer and Zwilling J.A. Henckels using the same steel and the striking designs of Bob Kramer, whose astounding knives "outperformed every knife [Cook's Illustrated Magazine] ever rated."
