The blades on these steak knives have an inverted, two stage serration which distributes wear and tear on the blades in a two-step process, keeping the blades sharper, longer. Even as the larger teeth begin to wear down on hard ceramic surfaces (such as plates) with use, the smaller teeth in between only come in contact with the steak and remain sharp.
