The Shun Kanso 6.5-inch Hollow Ground Nakiri Knife is a Japanese vegetable knife with a blunt tip and amazing slicing, dicing and chopping power. Use a push cut with the Nakiri by moving the knife down and forward, parallel to the cutting board. The unique shape and extremely sharp blade of this knife will make short work of cutting vegetables for stir-fry, salads and more. The hollow-ground indentations in the blade helps food release from the blade more easily.

In the tradition of Japan's ancient sword smiths, each Damascus-clad Shun Classic knife is handcrafted in Seki City, Japan with a 100-step process. The hand-sharpened blade is made of AUSA10 high carbon steel with a rustic, heritage finish to hide scratches. The blade of each Shun Classic knife is sharpened to a cutting angle of 16-degrees on each side.

The beautiful Shun Kanso handle is made of contoured Tagayason wood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria.
