The Shun Kanso 4-piece BBQ Knife Set includes everything you need to tackle grilled proteins of any type - from fish to brisket, ham to turkey. The three included knives come in a Shun 8-slot knife roll with a handle and a detachable shoulder strap, making this BBQ kit easy to carry to your back deck or that BBQ competition you entered.

The knives included are the Kanso Brisket Knife with a wooden Saya (sheath), the Shun Boning/Fillet Knife, and the multi-tasking Shun Kanso Asian Multi-prep Utility Knife.

The Kanso line of Shun knives was designed based on Zen philosophy, and its name means "simplicity." Shun took only the most essential elements of a knife - high-performance steel, razor-sharp edge, perfect balance and precision cutting control - and created a simple line of knives that provides simply perfect performance. The Tagayasan hard wood handle is contoured for the chef's grip and precision cutting. Tagayasan, known as "iron sword wood," was traditionally used in crafting Samurai sword handles. This wood is naturally dense, durable and beautiful.

The Shun Kanso 6" Utility Knife is versatile enough to peel an onion in-hand, and then slice it on a board. The very nimble 6" Utility is between a chef's knife and a paring knife - featuring a narrow, straight blade with a slightly curved belly ideal for moderate rocking cuts. Sometimes called a sandwich knife, the utility knife works well on virtually everything between the bread of a sandwich - from thin-skinned vegetables to meats and cheeses.

The Shun Kanso 12" Hollow-Ground Brisket Knife is ideal for trimming and slicing large cuts of meat such as briskets, roasts, ham and turkey. The blade is narrow and long, allowing you to make a single pass to slice meat. The hollow-ground edge keeps meat from sticking as you work. A saya, or wooden sheath, protects both the blade and your fingers when this knife is not in use.

The Shun Kanso 6.5" Boning and Fillet Knife is a rigid knife with a razor-sharp edge. The narrow, curved blade slides right in close to the bone for boning tasks. It slices through even the most fibrous tissue, making silver skin no problem and letting you make your own cutlets. The 6.5-inch blade is also well suited for filleting fish, gliding through and quickly removing bones and skin.
