The Shun Reserve 9-inch Bread Knife is an indispensable kitchen tool. The wide, "low frequency" serrations of this bread knife's blade are razor-sharp and easily slice through any loaf of bread or pastry - whether tender and delicate or crunchy and crusty - with only a gentle back and forth sawing cut. The sharp serrations keep the bread from being crushed or torn as it's sliced.
In the tradition of Japan's ancient sword smiths, each Western-style Damascus-clad Shun Reserve knife is handcrafted in Seki City, Japan. The blade is forged with 32 micro-layers of nickel silver and stainless steel in a flowing "ladder" damascus pattern on each side of a SG2* steel cutting core. This ultra-fine SG2 steel is incredibly hard and dense, allowing it to be sharpened to a 16-degree razor-sharp angle. The durable, edge-retaining, easy to sharpen core of SG2 stainless steel is exposed at the critical point - the blade's cutting edge.
The Shun Reserve line of knives offers the strength and balance preferred by Western-style knife lovers. Each knife has a crowned (rounded) blade spine and a full-tang riveted handle, providing a heftier blade that delivers both power and precision.
The beautiful Shun Reserve handle is crafted from charcoal and crimson PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria. The handle features rivets and a beautiful inlaid mosaic crest.

*What Is VG-MAX Steel?
VG-MAX is the newest in the line of VG super steels, building on the highly successful VG10 formula. VG-MAX contains more carbon, which provides strength and durability to a knife blade. Added chromium provides wear and corrosion resistance. Higher cobalt content enhances the strength of the blade, and increased tungsten allows the steel to be very fine-grained so the edge can be extremely fine and sharp. Molybdenum contributes to corrosion resistance and strength, while vanadium improves impact resistance and allows the steel to form vanadium carbides, which enhance cutting performance. Shun sharpens VG-MAX in its knife blades to 60-61 on the Rockwell Hardness Scale.
