The most versatile knife in any block, the Shun Reserve 6" Chef's Knife - Hollow Ground Edge is an all-purpose blade that's the perfect length for slicing, dicing, chopping and mincing small and medium-sized foods - from strawberries to onions and eggplants. The rounded belly of this knife can be gently rocked through garlic and fresh herbs to produce a very fine mince. The wide blade keeps knuckles off the cutting board, and makes it easy to transfer ingredients from the board to the cooking pan.
In the tradition of Japan's ancient sword smiths, each Western-style Damascus-clad Shun Reserve knife is handcrafted in Seki City, Japan. The blade is forged with 32 micro-layers of nickel silver and stainless steel in a flowing "ladder" damascus pattern on each side of a SG2* steel cutting core. This ultra-fine SG2 steel is incredibly hard and dense, allowing it to be sharpened to a 16-degree razor-sharp angle. The durable, edge-retaining, easy to sharpen core of SG2 stainless steel is exposed at the critical point - the blade's cutting edge.
The Shun Reserve line of knives offers the strength and balance prefered by Western-style knife lovers. Each knife has a crowned (rounded) blade spine and a full-tang riveted handle, providing a heftier blade that delivers both power and precision.
The beautiful Shun Reserve handle is crafted from charcoal and crimson PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria. The handle features rivets and a beautiful inlaid mosaic crest.

*What Is SG2 Steel?
SG2 steel has a complex, high-carbon, high-chromium formula. SG2 is known as "powdered steel." This is a high-end process in which the elements that make up the steel have been made into a very fine powder so they can be mixed together with precision. Once blended, the powder is heated and compressed, welding it into a solid mass. The result is a steel that is pure, dense and hard. This means it can take a very fine edge, and hold that edge for an unparalleled length of time. Shun's SG2 steel blades are rated 61-62 on the Rockwell Hardness Scale.
