Used most often to process fish and poultry, this Japanese knife is adept at beheading and filleting small fish, cutting through small bones and skin, boning poultry and cutting meat. The blade's single bezel gives it scalpel-like sharpness and precision. The Deba's blade is wide, with a dropped point and curved belly. In the tradition of Japan's ancient sword smiths, each Shun Classic Pro knife is handcrafted in Seki City, Japan with a 100-step process. Each knife features a 16-degree single-bevel blade with a sharp chisel edge. The blade is forged from pure VG10 steel, which imparts to the blade the desirable characteristics of wear resistance, corrosion resistance, hardness and toughness. The etched design on each blade is a striking pattern which pays homage to the etching found on custom Japanese blades and used to identify the blade's maker.
The beautiful Shun Classic Pro handle is an iconic, ergonomic D-shape. It is made of ebony PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria.

*What Is VG10 Steel?
VG10 steel is a complicated blend containing - in addition to the traditional iron and carbon - chromium, cobalt, manganese, molybdenum, silicon, and vanadium. Together, these elements combine to improve wear resistance, corrosion reistance, hardness and toughness in the blade. Vanadium keeps the steel's texture fine and even, making each Shun blade extremely sharp, with a long-lasting edge. Shun hardens VG10 blades to 60-61 on the Rockwell Hardness Scale.
