The Shun Classic 8-inch Chef's Knife is a tool no kitchen should be without. The most versatile knife in any block, the 8-inch Chef's is an all-purpose blade that's the perfect length for slicing, dicing, chopping and mincing small and medium-sized foods - from strawberries to onions and eggplants. The rounded belly of this knife can be gently rocked through garlic and fresh herbs to produce a very fine mince. The wide blade keeps knuckles off the cutting board, and makes it easy to transfer ingredients from the board to the cooking pan. The Shun Classic Chef's Knife boasts a thinner blade, which makes this knife lighter and less tiring than its European-style Chef's knife counterparts.
In the tradition of Japan's ancient sword smiths, each Damascus-clad Shun Classic knife is handcrafted in Seki City, Japan with a 100-step process. The blade is forged with 34 micro-layers metal on each side of a VG-MAX* cutting core. There are alternating layers of 431 and 410 stainless steel, plus one additional layer of nickel on each side of the cutting core. Forged into one single, strong piece of metal, these layers, which provide the beautiful, swirled pattern of the blade, support the core, add stain and corrosion resistance, and help the food slide from the blade. The durable, edge-retaining, easy to sharpen core of VG-MAX stainless steel is exposed at the critical point - the blade's cutting edge. The blade of each Shun Classic knife is sharpened to a cutting angle of 16-degrees on each side.The beautiful Shun Classic handle is an iconic, ergonomic D-shape. It is made of ebony PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria.
The Shun Classic Combination Honing Steel has two surfaces: a smooth one for day-to-day honing, and a micro-ribbed one for weekly honing. Shun's harder steel means you can hone just once a week or so, depending on your level of use. To make honing to the correct 16° Shun angle easier, the Shun Classic Combination Honing Steel has a built-in 16° angle on the handle. The premium PakkaWood handle provides a secure grip and matches the handles of the rest of the beautiful Shun Classic line.
The Shun 11-slot Bamboo Block is made of durable, lightweight, and very renewable bamboo that will look beautiful on your kitchen counter. Since bamboo absorbs very little moisture, it doesn’t shrink or swell like other hardwoods, making it ideal for kitchen accessories.
