The Shun Classic 8-inch Kiritsuke Knife is a gorgeous knife favored by master chefs. This kitchen multi-tasker, once mastered, is ideal for vegetables - easily turning out a beautiful julienne, dice or brunoise. It is also an excellent choice for shaving chives and scallions, and cleaning and portioning boneless proteins such as fish. This razor-sharp knife, often used in place of a mandolin, is suited to a wide variety of kitchen jobs.

In the tradition of Japan's ancient sword smiths, each Damascus-clad Shun Classic knife is handcrafted in Seki City, Japan with a 100-step process. The blade is forged with 34 micro-layers metal on each side of a VG-MAX* cutting core. There are alternating layers of 431 and 410 stainless steel, plus one additional layer of nickel on each side of the cutting core. Forged into one single, strong piece of metal, these layers, which provide the beautiful, swirled pattern of the blade, support the core, add stain and corrosion resistance, and help the food slide from the blade. The durable, edge-retaining, easy to sharpen core of VG-MAX stainless steel is exposed at the critical point - the blade's cutting edge. The blade of each Shun Classic knife is sharpened to a cutting angle of 16-degrees on each side.

The beautiful Shun Classic handle is an iconic, ergonomic D-shape. It is made of ebony PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria.

Features of the Shun Classic 8" Kiritsuke Knife:

  • Full composite tang
  • D-shaped ebony PakkaWood handle
  • 16-degree cutting angle on each side, flat ground
  • VG-MAX stainless steel cutting core
  • Handcrafted in Japan

Blade Length: 8 inches
