The Victorinox (formerly Forschner*) 12-inch Wide Blade Granton Edge Roast Beef Slicing Knife features a Fibrox handle and extremely sharp semi-flexible blade that holds its edge.

The patented Fibrox handle is dishwasher safe and slip resistant, even when wet. It is also NSF approved, as crevices that would offer hospitality to bacteria are minimized. As with all R.H. Forschner knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.

Forschner knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

The long, thin, semi-flexible blade if this slicing/carving knife produces very little drag when cutting slices of turkey, ham or beef.

Filet salmon the easy way. Review by Happy Alaskan

I bought this knife as a gift for my dad before his annual summer in Alaska.

I watched him filet 20 sockeye salmon in 30 minutes with a grin on his face the whole time the first time he used it.

40 perfect full side filets. Never needed to sharpen it. No stopping with comments about his shoulder hurts.

At first he just said it was "just okay." But he put his favorite filet knife for the last 20 years in the drawer and it hasn't come out.

This 12" knife is his new favorite. He has used it everyday for the last two months with just a daily quick sharpening on his steel. He tells everyone about this knife; just don't bother asking to borrow it. (Posted on 8/3/2015)

Great knife even for small hands! Review by Kathy

I had some doubts about purchasing this knife because I have very small hands with arthritis and I'm left handed, and late 70's.
I say this because just about everyone can use this knife. It is really amazing! You can cut very thin slices which I did on Christmas Day on a garlic sirloin tip roast. One tip for left overs is to slice them while the roast is still warm. Outstanding knife and worth the $59.99. Don't let the length scare you, it is very easy to use. (Posted on 12/28/2013)

Excellent Knife Review by Mr. Mike

My hobby would be best described as "outdoor cooking", and therfore I need a very effective knife to slice or carve larger cuts of meat. With a longer blade, I don't need to "saw" on the meat to carve it as required by shorter, smaller knives. I've found knives of the same size, but they start at $200. This is a great value.
