The Classic 7" Deba Knife by Wusthof is crafted in the Japanese culinary tradition, combining the benefits of a cleaver with that of a chef's knife. Used most often to process fish and poultry, this Japanese knife is adept at beheading and filleting small fish, cutting through small bones and skin, boning poultry and cutting meat. The blade's single bezel gives it scalpel-like sharpness and precision. The Deba's blade is wide, with a dropped point and curved belly. A slightly hollow-ground back keeps delicate foods intact and helps food quickly released from the blade. The Classic 7-inch Deba is a nimble, precise knife.
Each knife in the Classic triple riveted series by Wusthof-Trident is forged from a single piece of specially tempered high carbon stainless steel to ensure outstanding strength. Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
