The Gourmet 7" Hollow Edge Chai Dao Knife by Wusthof is a versatile cross between a santoku knife, a traditional cook's knife, and a cleaver. The Chai Dao's curved blade makes slicing, dicing and mincing easy with a smooth rocking motion. The hollow edge creates air pockets that keep food from sticking to the blade as it's sliced. The width of the blade serves as an effective shape for crushing garlic and other aromatics, as well as for scooping foods from the cutting board. The heft and shape of this unique knife's blade also allows for the performance of tasks usually calling for a cleaver, such as bisecting a lobster tail or cubing tough cuts of beef.

Each knife in the Gourmet series by Wusthof-Trident is precisely cut from a single piece of high-quality, high-carbon steel with the latest state of the art laser technology. The steel used in this line is the same as that in the renowned Wusthof Classic and Classic Ikon forged series. The Gourmet line also features a new handle design made of a highly durable synthetic material – Polyoxymethylene (POM) – which has a tighter molecular structure to resist fading and discoloration.

Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
