The Wusthof Epicure 7" Hollow Edge Santoku Knife is a classic Japanese cooking knife ideal for thin slices. Special bevels on the blade create air pockets between the blade and food, preventing slices from sticking to the knife for cleaner and more efficient slices.

Epicure Knives by Wusthof are designed for the most masterful home cooks who enjoy beauty as well as precision. Each blade is created with elegant and progressive lines that are precision forged and tempered to 58 degrees Rockwell and then coated with a translucent ceramic coating to increase hardness and enhance resistance to corrosion.

The handle of each Epicure knife looks and feels like wood, but is crafted from natural, eco-friendly, organic wood fibers also used in high-end Epicurean cutting boards. This naturally hygienic special wood blend is pressed with food-safe resin, which gives the ergonomically sculpted handle a silky feel and keeps it from slipping from your hand.

Engraving: The blade of the Epicure 7" Hollow Edge Santoku Knife can be engraved up to 12 characters to create a unique gift or for identification.

Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
