    The Kanso line of Shun knives was designed based on Zen philosophy, and its name means "simplicity." Shun took only the most essential elements of a knife - high-performance steel, razor-sharp edge, perfect balance and precision cutting control - and created a simple line of knives that provides simply perfect performance. The Tagayasan hard wood handle is contoured for the chef's grip and precision cutting. Tagayasan, known as "iron sword wood," was traditionally used in crafting Samurai sword handles. This wood is naturally dense, durable and beautiful.

    The Shun Kanso 3.5" Paring Knife is an essential kitchen knife. Ideal for peeling, coring, trimming, decorating, and other detail work; its small size gives you complete control over the tip and edge of the blade.

    The Shun Kanso 5.5" Hollow Edge Santoku Knife brings a newer, simpler design to an all-purpose kitchen knife with a name meaning "three virtues." The "three virtues" of the Santoku Japanese blade shape are twofold: referring to the three types of food the Santoku is designed to prepare - vegetables, poultry and fish - and the three types of cuts at which it excels - slicing, dicing and chopping. The hollow-ground indentations (also known as granton edge) on the blade reduce the friction between the blade and the food, allowing the blade to glide through even usually-sticky potatoes, and also creating pockets of air so the knife releases the sliced food from the blade more easily.

    The Shun Kanso 6" Utility Knife is perfect for many small tasks that require precise cuts. It's versatile enough to peel an onion in-hand, and then slice it on a board. The very nimble 6" Utility is between a chef's knife and a paring knife - featuring a narrow, straight blade with a slightly curved belly ideal for moderate rocking cuts. Sometimes called a sandwich knife, the utility knife works well on virtually everything between the bread of a sandwich - from thin-skinned vegetables to meats and cheeses.

    The Shun Kanso 8" Chef Knife is perhaps the most essential kitchen tool. The 8-inch Chef's is an all-purpose blade that's the perfect length for slicing, dicing, chopping and mincing small and medium-sized foods - from strawberries to onions and eggplants. The rounded belly of this knife can be gently rocked through garlic and fresh herbs to produce a very fine mince. The wide blade keeps knuckles off the cutting board, and makes it easy to transfer ingredients from the board to the cooking pan.

    The Shun Kanso 9-inch Combination Honing Steel is designed to gently realign the cutting edge of your Shun cutlery. Each time you use your knife, the cutting edge naturally bends over slightly. While the knife is still sharp, the sharpest edge is no longer making contact with the food. Honing the blade with a honing steel realigns this edge and prolongs the sharpness of the blade.
