The Swiss Classic 2.5" Shaping Knife by Victorinox features an ergonomic handle that fits nicely in your hand, as well as a sharp blade that holds its edge.

Victorinox knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

The contemporary handles of Swiss Classic knives are inspired by the patented fibrox handles of Victorinox's professional knives, which are the preferred tools of chefs around the world. Swiss Classic handles are NSF approved, with minimal crevices to offer hospitality to bacteria.

The curved blade of this Swiss-made shaping knife is perfectly designed for peeling and shaping fruits and vegetables. The arc of the blade allows you to easily follow the curve of any fruit or vegetable you are peeling. This shaping knife is also known as a bird's beak, tourne or peeler.

The real test of this little paring knife will be time: how well the blade holds an edge. If it is built of anything like the same steel used in Victorinox pocket knives, I am completely confident. However, the steel appears to be just stamped, and it is light enough to bend easily--not an altogether bad trait in a specialty fruit and coring knife, but certainly not a mark of anything approaching forged quality.

The edge is well and evenly honed. The good part of the handle of this knife is that it is seamless polypropylene, so it's completely water resistant and dishwasher safe; the bad part of the handle is its size: it is tiny. If one will be doing a lot of prep work, this knife will not be comfortable. And inasmuch as the safety of any knife if directly proportional to how securely it can be held and directed, this one might not be well suited for extensive or lengthy use. It is very sharp, and the arc of the blade is such that control will always be important to prevent accidents.

But for $7, it will be worth the experiment. If it proves to hold an edge well and I can learn to grip it comfortably, I'll definitely buy another.

I have found that the birds beak paring knife is the most valuable knife i have in my kitchen. You must be very careful during the use of this knife, it has an edge like a razor. It not only will work as a paring knife, It will cut a tough steak or fingers too.
I love my birds' beak paring knife made by Victorinox. I have more than one, and have given them as gifts. Everyone loves them.
