The Viking 5" Hollow Ground, or Granton, Santoku Knife is the Japanese equivalent of the versatile European chef's knife. It is well suited for fish, meat and vegetables. The width of the blade elevates your hand above the counter, allowing for ample knuckle clearance, and the curvature of the blade allows for chopping by rocking the blade. It is also adept at slicing with a forward and back motion and chopping up and down. The granton edge reduces friction and cuts down on food sticking to the blade as you cut.
