The Victorinox* (Formerly R.H. Forschner) 8-inch Chef's Knife by Victorinox features a Fibrox handle and extremely sharp blade that holds its edge.

The patented Fibrox handle is dishwasher safe and slip resistant, even when wet. It is also NSF approved, as crevices that would offer hospitality to bacteria are minimized. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.

Victorinox knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

The Victorinox (R.H. Forschner) 8 inch Chef's Knife won the distinction of Best Value in the April, 2007 Cook's Illustrated test. Testers for this popular consumer magazine summarized their review by saying, "This is exactly what a knife is supposed to be."

I received this as a wedding present in 1993 and it is without a doubt the BEST knife in my kitchen. I jokingly tell others I would get rid of my husband before getting rid of this knife!

I have the 8" chef and the 10" carving. I first read about them in the Equipment Roundup section of a Cook's Country mailer several years ago. The 8" chef was rated the best knife under $50. The knives were very sharp right out of the package, hold their edge well, and re-sharpen well when necessary. Great knives.

I have a few expensive forged German stainless and a few Japanese chef's knives. Many people told me that the quality is second to none on the Victorinox Forschner chef's knife so I just had to get it. This has officially become my daily-use go-to knife! I swear by my forschner boning carving knives already, so I knew I wouldn't be disappointed. Don't get me wrong, I like my expensive knives but I'm so afraid to damage them. Do your homework "doubting thomas ", the knife is the same as it has always been. Rate the quality of the knife as well as the stamp. Furthermore, both companies have a stellar reputation. Great knife.

Have had these for about 2-3 years....
Own the chefs and the santuko, very pleased. My german blades are getting
lonely just sitting in the block.
Performs very well. Easy to handle.

We apologize for any confusion, but please rest assured that despite the fact that it does not say R.H. Forschner, the knife you received was exactly what you ordered. R.H. Forschner by Victorinox has a new name, but remains otherwise unchanged. As per a press release from the manufacturer (a link to the press release is included below), R.H. Forschner knives have not changed at all, they are simply being branded as Victorinox Swiss Army instead of R.H. Forschner by Victorinox. The press release includes some company history and details. Swiss Knife Shop is in the process of revising our site to reflect this change.

After reading in my Cook's Illustrated Magazine that after testing, this R.H. Forschner 8 inch Chef's Knife won the distinction of Best Value chef's knife, and their review said "This is exactly what a knife is supposed to be," I decided it was time I purchase a chef's knife. I'd always been afraid to handle such a large knife before. I found this knife lightweight and very easy to handle. I use it often and enjoy all it can do. It is very sharp and handles beautifully. I have purchased many for gifts and feel good knowing I am giving a truly useful tool.
