The Victorinox (formerly Forschner*) 6-inch Flexible, Curved Blade Boning Knife by Victorinox features a Fibrox handle and extremely sharp blade that holds its edge.

The patented Fibrox handle is dishwasher safe and slip resistant, even when wet. It is also NSF approved, as crevices that would offer hospitality to bacteria are minimized. As with all R.H. Forschner knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.

Forschner knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

I've owned 2 Victorinox Boning knives I purchased used at a bait shop many years ago. Although they lack cosmetically, they are an excellent tool and I can safely say you will be satisfied with the quality and edge holding steel they're made of. I use them for slicing, piercing, and warn anyone that picks one of them up at my house to be very careful as they'll cut them before they know. it. Even though after countless sharpening; they will remain serviceable long after I have need of them.

I work in a general store and butcher shop in southern vermont. I work at a store named Singletons located in Proctorsville Vermont. We are well preserved by our selection of hand cut steaks, old fshion service and quality, smoked meats and oh yeah...whiskey guns and ammo. since i have been working there we use these victoninox 6'' flexible boing knife to do alot of trimming for meats, these knives are great, they are comfortable, built to last and just good looking. These knives should be tried on trimming fat and working around a bone, i can cut down a lamb leg with one of these knives in only a few minutes...its all in the product, a good product - love it!
