The Victorinox (formerly Forschner*) 4 inch Spear Tip Paring Knife features a large black NSF-approved Polypropylene handle. Crevices that would offer hospitality to bacteria are minimized. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.

Forschner knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

This classic paring knife with its tapered tip is perfect for carving out the eye of a potato or the blemishes on a peach.

The real test of this paring knife will be time: how well the blade holds an edge. If it is built of anything like the same steel used in Victorinox pocket knives, I am completely confident. However, the steel appears to be just stamped, and it is light enough to bend easily--not an altogether bad trait in a paring knife, but certainly not a mark of anything approaching forged quality.

The edge is well and evenly honed. The good part of the handle of this knife is that it is seamless polypropylene, so it's completely water resistant and dishwasher safe; the bad part of the handle is its size: it is small, even though it is advertised as large. It is almost identical in thickness and contour to the standrad paring knife, but only about 0.25" longer. If one will be doing a lot of cutting, this knife will not be comfortable. And inasmuch as the safety of any knife if directly proportional to how securely it can be held and directed, this one might not be well suited for extensive or lengthy use.

But for $6, it will be worth the experiment. If it proves to hold an edge well and I can learn to grip it comfortably, I'll definitely buy more.
