This R.H. Forschner 3 1/4 inch Paring Knife by Victorinox features a large Polypropylene handle. Crevices that would offer hospitality to bacteria are minimized. As with all R.H. Forschner knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.

Forschner knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.

This classic paring knife with a tapered tip is perfect for carving out the eye of a potato or the blemishes on a peach.

Most Testers loved the "great flexibility" of this knife, which slid under silver skin easily and turned the curve of an apple nicely. In the test kitchen, we find that 3 1/2-inch blades are the best size for most paring tasks.Though some testers complained that this lightest of all the knives lacked "heft," most agreed that the super-thin, razor-sharp edge more than made up for it.
The cheapest knife, the lightweight Forschner Fibrox, turned out to be the best, beating models that cost six times as much. Your are buying the best of the best!!!!

i bought one of these knives at a flea market probably 15 yrs ago and for all that time not many days have gone by that i did not use it several times to prepare a meal it had been sharpened many times over and had almost been used to nothing when it finally broke i was very upset thinking id never find another one but thanks to your website my husband searched till he found it and im one happy housewife again thanks again for such quality products that can be trusted for years and years
